An easy to navigate session that is ideal for active operations looking for a clear roadmap for operational improvements, market positioning, asset performance, and customer advocacy. Usually completed within 4-6 weeks depending on location.

Ready your team for a collaborative session with Freshwater where we delve into the present tense of the operation and discover the hurdles, goals, and vision from the FOH and BOH. Then we’ll dive a little deeper and review your menu mix and execution, P&L’s focusing on COG’s, operating procedures, and training docs. Finally, we’ll marry the data with guest feedback by combing through the review channels to give you a better understanding of the ecosystem.

Members of the Freshwater team will conduct a site visit and even a secret shopper evaluation where we can assess the operation first-hand - through the lens of your guest and to ‘peel back the onion’. We’ll meet with ownership, leaders, and stakeholders to review the goals and present initial findings of the visit which can lead to immediate improvements. n

We’ll start with a number of virtual meetings with owners, stakeholders, and leadership members to discuss the mission and vision so that we land solidly on a scope and have clear objectives. These early sessions have no boundaries and we encourage free-thinking as we discuss the conceptual process, menu design, market gap and penetration, budget, timeline, and even the intended location and decor.

• Soon after the virtual sessions Freshwater will choose a city for our market experience and share a list of venues to visit where benchmarking for your concept can be conducted. We can couple this discovery process with a visit to your marketplace to conduct competitive benchmarking for an even deeper analysis.
• Freshwater will meet your team for a two day F&B market experience. At first glance this step in the journey always sounds like a load of fun…and we certainly keep it light-hearted and filled with energy, but don’t be fooled…you’ll be working hard.
• Over these two days we’ll experience 15+ restaurants, depending upon your concept and goals, where we’ll share bites to benchmark and detail every step. From curb appeal and parking, greeting and decor, menu mix and form of ordering, kitchen and wait staff, tableware and ticket times, food temps, taste, textures, holding times, and much much more.

The third day of our market visit is reserved for a brain dump and a gathering of the facts, notions, insights, and experiences from the past two days. This step of the process is quite fulfilling and everyone will depart with a pep in their step and anticipation for the results to come.

A few weeks after the market visit, Freshwater will deliver our initial findings to ensure that the team who conducted the market visit as well as the onsite team are in lock step. Shortly after this session, we’ll produce a comprehensive and multi-disciplinary strategy and SWOT analysis, depending on the scope of work, that assists in bringing your concept and vision to market by filling the gap, and ensures performance, execution, and success.
